Spicy Southwestern Roasted Potatoes



Here's a hot and spicy side to go with your burgers. This one was inspired by Hayley, too!

Spicy Southwestern Roasted Potatoes

4-6 medium-sized red potatoes, cut into roughly equal sized wedges
1-2 tablespoons vegetable oil
1/4 teaspoon ground cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste

Preheat your oven to 400 degrees.

In a medium bowl, toss the potatoes with the vegetable oil and the spices until they are completely coated. Add salt and pepper to taste. Spread in an even layer on a baking sheet. Bake for 30-40 minutes, or until golden brown and slightly crispy on the outside. Serve warm.

Yum yum! I do these except sub olive oil, minus the paprika, and add crushed red pepper.

SO GOOD! And your photos look incredible too :)

mmmm the call of the carb. I love roasted potatoes and with a kick of cayenne powder, it couldn't be better.

They look lovely. I often parboil my potatoes for wedges. Unfortunately I have been known to forget about them and they end up overcooked and fall apart when I put them into the oven.

Skipping that bit must result in better wedges. But do they not go hard in the middle?
